Self Raising Flour 240g
Butter, softened 220g (2/3 cup)
Caster Sugar 110g
Egg (59g) 1
Baking Powder ¼ teas
Salt ¼ teas |
Mix sugar, butter, egg and half the
flour (sifted) until soft. Mix in balance of flour, sifted with baking
powder and salt to make a smooth
dough. Divide mixture into 2 equal parts.
Place sheet of baking paper on bench top. Lightly flour paper. Place one
half of mixture onto baking paper. Gently shape into a log
approx 30cm long. Roll log in the baking paper. Fold ends under. Repeat
with second half. Freeze logs for 30 minutes. Set oven to 180 degrees.
Unwrap logs and slice into 1cm thick slices. Shape into rounds. Place
pieces on greased or paper-lined tray, allowing for a little spreading,
and bake for 12-15 minutes or until a pale colour.
Cool on tray. Remove to cake cooler. |
