8 scallops
1 small onion - chopped
½ pint dry white wine
2 tablespoon butter
2 tablespoon flour
5 ounces milk
Salt and pepper
1 tablespoon Parmesan cheese
4 tablespoon whipped cream |
1. Place scallops, onions and wine in
pan. Simmer until the scallops become opaque - about 10 minutes.
2. Remove scallops and onions, and reduce wine to one quarter.
3. Melt butter in a pan, stir in flour and cook 1 minute.
4. Gradually stir in milk and wine.
5. Add scallops and onion and season to taste.
6. Spoon mixture into scallop shells or ramekins.
7. Fold cheese into the cream and spread over the scallops.
8. Grill until golden brown and serve at once. |
