Fat
l packet dry yeast - mix with ¼ cup warm water and leave to rise 30 min.
1 ½ cups flour
1 bottle beer |
Fish:
1. Make a well in the flour. Put in the yeast.
2. Mix in beer slowly to make a batter.
3. Put in a warm place to rise to twice it's size.
4. Dip fish in flour - shake off excess.
5. Dip in batter lightly.
6. Heat fat to 375°F (Try by dropping in a little batter. It should brown
and rise in seconds.)
7. Drop in the fish. Watch close... it won't take long to cook.
Chips
1. Cut large potatoes into ½" chips.
2. Soak off starch in cold water.
3. Dry real good.
4. Drop into 350°F fat until light brown.
Note:
1. Just before serving, drop back into fat at 375°F until brown and crisp.
To be crisp, the fat needs to be at 375°F. 2. Serve with salt and vinegar. |
