1 cup chopped dates
1 cup boiling water
1 teaspoon bicarbonate of soda
1 cup sugar
2 Tablespoons butter
1 egg
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Syrup:
1 1/2 cups sugar
3/4 cup water
1 teaspoon butter
1 teaspoon vanilla
1/2-1 cup brandy, depending on taste |
1. Pour boiling water over dates and
sprinkle with bicarb.
2. Cream together butter, egg and sugar.
3. Sift together the flour, salt and baking powder. Combine all these
ingredients and bake in an oven-proof dish at 190° C for about 30-40
minutes, or until a knitting needle inserted comes out clean. (Check after
30 minutes - it may take even longer than 40, depending on the type of
dish used.)
Syrup:
1. Boil the sugar and water for 5 minutes.
2. Add the brandy, vanilla and butter and stir.
3. Make holes all over the baked mixture with a knitting needle and slowly
pour the syrup over it.
4. Serve hot or cold with lashings of whipped cream. |
