Self Raising Flour 300g 10.5oz
Milk Free Margarine 125g 4.5oz
Castor Sugar 170g 6oz
Eggs (55g size) (Lightly Beaten) 3
Soy Milk 200ml 7oz
ORANGE CAKE Add the grated rind of 2 oranges when creaming the
margarine and sugar. Reduce the soy milk content to 100ml and add 100ml of
fresh orange juice. |
Cream margarine and sugar together
until light and fluffy. Gradually add beaten eggs. Add sifted flour and
soy milk alternately. Stir
gently to combine. Bake in a lightly greased and base lined 20cm (8inch)
round tin at 170°C (340°F) for 40 minutes or until cooked.
Variations:
CHOCOLATE CAKE Add 15g (½oz) cocoa when sifting Self Raising
Flour.
Increase soy milk to 280ml (10oz).
COCONUT CAKE Add 100g desiccated
coconut when adding the Self Raising flour. |
