Bananas (very ripe) 2, mashed 1 cup
Lemon Juice 3 teas
Eggs (59g) 2
Caster Sugar 125g
Vanilla Essence 1 teas
Self Raising Flour 200g
Soy Compound 50g
Water 125ml
LEMON ICING:
Pure Icing Sugar 1 cup
Margarine (melted) 1 teas
Lemon Juice - Enough to make a spreadable consistency. |
Beat eggs until thick and creamy. Beat
in caster sugar. Add vanilla and the mashed banana combined with the lemon
juice. Sift flour and Compound and fold into mixture with water. Pour into
greased loaf tin. Bake at 170°C for 40 minutes. If browning too
quickly, place foil over top. Remove from oven when tester comes out clean
and cake comes away
from edge of tin. Allow to stand for a few minutes before turning out on
wire rack. Ice with lemon icing. Combine all ingredients until smooth and
the desired consistency is reached. Decorate with walnuts, peacans or
dried banana pieces if desired. |
