S.R. flour 120g
Baking Powder, gluten-free ½ teas
Soy Compound 16g
Water 160ml
Dried Apricots, chopped 100g
Water, boiling 1 cup
Nuts of choice, chopped 3 tabs
Honey 1 tab
Eggs (59g), separated 2
Set oven to 180 degrees.
Spray grease 4 x 2/3 cup ovenproof dishes. |
Place apricots in heatproof bowl. Add
boiling water and stand for 5-10 minutes. Drain.
Sift flour, baking powder, and soy compound into a medium bowl. Add nuts.
Whisk egg yolks, water and honey together. Add apricots to dry ingredients
and mix well. Add egg mixture to bowl and stir to combine. Beat egg whites
until soft peaks form and fold into mixture. Scoop mixture into prepared
containers and bake for 20-25 minutes or
until cooked when tested. Remove from oven. Serve hot with cream, ice
cream or yoghurt. |
