| APRICOT Self Saucing SPONGE PUDDING | |||||

| Preheat
oven to 200C. 1 Cup SR Flour ¾ cup Castor Sugar Sift together. 2 Tablespoons Margarine & 1 cup Apricot Juice (from tin) in saucepan, add vanilla to taste. Stir in flour mixture. 1 x 850 gram tin Apricot Halves (layer ½ Apricots on bottom of dish) Grease dish, put in dough. Cover mixture with balance of Apricots. Pour over dough 1 small can Apricot Nectar. Bake 40 – 45 minutes. Variations: Put tinned fruit, drained, into bottom of dish. Put dough over top and pour 2 cups of fruit juice over top and bake as above. |
