ANZAC BISCUITS (cookies)
This recipe was sent in by Lisa Henderson from Springwood, Brisbane,
Australia ... Thank you! Lisa says... "During WWI the women of Australia were worried about the nutritional value of the food being supplied to their men. Theyhad to come up with something that would not spoil before reaching the
troops. (usually took 2 or more months by merchant ships to reach the destination). They also faced another problem, and that being, that eggs were scarce because many of the poultry farmers had left to join the war. Therefore they had to use a different binding agent instead of the egg. Golden Syrup or treacle was the answer and together with the rest of the ingredients they came up with a healthy and yummy biscuit (cookie). ANZAC (Australian & New Zealand Army Corp). Australians remember all those that have fallen in times of war on ANZAC day (25th April). For
more info on ANZAC day just do a search on the internet. ENJOY."

Ingredients:

Method:

1 cup plain flour
1 cup rolled oats
1 cup desiccated coconut
1 cup brown sugar
1/2 cup butter
2 1/2 tbsp Golden Syrup (or honey)
1 tsp bicarb soda
2 1/2 tbsp boiling water

1. Combine flour, oats, sugar and coconut into a bowl.
2. Melt the butter and golden syrup(honey)in a pot over low heat.
3. Mix the bicarb soda with the water and then add to the butter and
Golden Syrup(or honey).
4. Pour the liquid mixture into the dry mixture and mix well.
5. Teaspoon dollops of the mixture onto a greased tray (leave space for spreading).
6. Bake in a 180°c (or 350°F) for 15-20mins.
